Roasted Vegetables with Balsamic Vinegar- So Delicious, Even the Kids Will Love Them!
Change up your vegetables and side dishes by making our amazing oven roasted vegetables with balsamic vinegar recipe and roasted garlic olive oil. It creates mouth-watering roasted vegetables that are like no other! Using the slow cooking oven method along with the addition of our fine balsamic vinegar, the result is an unbelievable combination that will keep you wanting more. It is so delicious it will even make your children love vegetables!
Here we have used carrots, turnip and onion. Although, any combination of vegetables, which require the same cooking time will work too. You could also use potatoes, sweet potatoes, squash, and parsnips. This recipe serves 6 people.

Ingredients
| 2 Cups | Carrots, fresh – baby or cut in 1 inch pieces |
| 2 Cups | Turnip, fresh – cut in 1 inch pieces |
| 2 Cups | Onion, fresh – whole pearl or a vidalia roughly chopped |
| 2 Tbsp | Balsamic Vinegar |
| 2 Tbsp | Roasted Garlic Olive Oil |
| 2 Tbsp | Herbs from Provence |
| 2 Tbsp | Brown sugar |
| To taste | Salt and freshly ground pepper |
Instructions
1. Preheat oven to 375°F.
2. Lightly oil a roasting pan.
3. Place the pan in the oven for 10 minutes.
4. In a bowl mix together Roasted Garlic Olive Oil, Balsamic Vinegar, Herbs from Provence, brown sugar, salt and pepper.
5. Toss this mixture into the prepared vegetables.
6. Remove the roasting pan from the oven.
7. Toss the vegetables into the pan.
8. Bake for 30 – 60 minutes, or until vegetables are cooked.
9. Remove from the oven and sprinkle with additional balsamic vinegar. Serve immediately.

Make sure that all of your vegetables are cut as close to the same size as possible. In our recipe, it is suggested to use one inch pieces. Having all the ingredients the same size will allow for the cooking process to be more even.
