This particular traditional balsamic is born from sweet, dried grapes and aged for 15 years. It contains aromas and flavors of plum jam with red fruits intertwined with a hint of honey and vanilla. The aroma and flavour of the vinegars creates a great density and sweetness that makes it so loved.
This traditional Italian balsamic is classified as an I.G.P balsamic. These I.G.P balsamics have a higher acidity that has a strong reflection in the taste. It is fairly close to a standard vinegar with a touch of sweetness.
The vinegar is cooked in pressurized vats and aged for at least two months in large wooden barrels. The product is aged in barrels with aged balsamic vinegar that is extracted from a series of centuries old casks.
This traditional balsamic makes for a flavourful salad dressing. It is also a wonderful addition to fresh pasta dishes, such as ravioli. Also use it on select cuts of beef, softcheeses, fresh fruit and desserts. Try putting a few drops on fresh berries, Parmigiano-Reggiano cheese, or creamy desserts like panna cotta, zabaglione, or vanilla ice cream. Finally, use it at the end of cooking as a drizzle over traditional veal scaloppine, a rich risotto, or Italian stew bollito misto. In Italy, traditional balsamic has the use of a palette cleanser, aperitif or digestif, especially on special occasions such as weddings.
