Piri Piri: Chili & Garlic Portuguese Sauce
Piri Piri is a staple on the Portuguese table. It is a flavourful yet moderately hot chili pepper sauce, that is a great addition to any dish. It originated in Portugal, but is prevalent in Angola, Namibia, Mozambique, and South Africa. It is often made from crushed chillies, citrus peel, onion, pepper, salt, lemon juice, bay leaves, paprika, pimento, basil, oregano, and tarragon.
This slather-on condiment is ideal for before and after cooking. Exemplary uses include poultry, pork ribs, fish, and shrimp. Make it your own by adding fresh herbs, extra virgin olive oil, melted butter, or even bacon fat.
